OUR GRAINS

At Beck’s Bakery we’re all in on whole grains. It’s a way of life for us.  Every Beck’s product is made with whole grains.  We buy our grains from local farmers.

That means we use the entirety of the bran, germ & endosperm without sifting away anything, which large commercial bakeries typically do.

We freshly mill our own whole grain flours, approximately 100 lbs. at a time, and use the fresh flours promptly for the week’s bakery production.

Our fermentation process for fresh dough is also unique because it’s considerably longer than other bakeries.  Ours is up to 36 hours, which adds time to the production process, but also allows for greater flavor development and shelf stability.
